Embedding Technology is the solid, liquid or gas and other core substances (such as active ingredients, flavor substances, microorganisms, etc.) wrapped in one or more layers of wall materials (such as polysaccharides, proteins, lipids, etc.) to form tiny particles or capsules, mainly used to protect the core substance, control the release, improve stability or cover up the bad flavor, embedding technology through the "protection and regulation" of the core substance, to solve the stability of many active ingredients in processing, storage and application, is an important technical means to improve product function and quality.
Central Role
• Protection of active ingredients: Isolate the destruction of core substances by the external environment (such as oxygen, light, temperature, humidity) and prolong the shelf life (such as probiotics, vitamins, enzyme preparations, etc.).
• Controlled release: Through the dissolution and degradation characteristics of the wall material, the core substances are released in a specific environment (such as intestinal tract and high-temperature processing) to improve the efficiency of action (such as sustained-release drugs and targeted release of nutrients).
• Improve physical and chemical properties: mask the bitter taste, fishy smell and other undesirable flavors of the core substance (such as fish oil, traditional Chinese medicine extracts), or improve its fluidity and solubility (such as oil substances made into powder).
Fields of Application
• Food Industry:
◦ Encapsulation of flavor substances (such as flavors and spices) prevents volatilization during high-temperature processing and prolongs the retention time of food aroma (such as baked goods and instant noodle seasonings).
◦ Probiotic encapsulation to improve its survival rate in the acidic environment of the stomach and ensure that it reaches the intestine to play its role (e.g., probiotic yogurt, probiotic supplements).
◦ Functional ingredients are encapsulated (e.g. Omega-3 fatty acids, plant extracts) to improve their stability and palatability.
• Pharmaceutical Industry:
◦ It is used for drug embedding to achieve sustained-release, controlled-release or targeted drug delivery (such as capsules, microspheres) to reduce drug side effects and improve drug efficacy.
• Feed Industry:
◦ Encapsulation of feed additives (such as enzyme preparations, trace elements) to avoid their destruction in the early stage of feed storage or animal digestion, and improve the absorption and utilization rate.
Embedding Method
• Spray drying method: After mixing the core substance with the wall material solution, it is spray dried to form microcapsules, which is suitable for substances with good thermal stability, simple operation and low cost, and is widely used in the food industry.
• Freeze-drying method: suitable for heat-sensitive substances, the mixture is solidified by freezing, and then dried to remove water to form embedded particles, which can better retain the active ingredients.
• Emulsification method: the core substance (such as grease) is dispersed in the wall material solution to form an emulsion, and then solidified to form microcapsules, which is suitable for fat-soluble core substances.
